With kids

Kids love the Grand Bazaar's sensory overload and the idea of an underground city. Hot air balloons have age restrictions (usually 6+). Turkish ice cream (dondurma) vendors put on a fun show. Istanbul has good parks and the Istanbul Aquarium.

With seniors

Istanbul's Old City is hilly with cobblestones — comfortable shoes essential. Cappadocia balloon rides are gentle and accessible. Domestic flights (Pegasus, Turkish Airlines) are affordable for older travelers. Turkish baths can be intense — choose a milder option. Tap water is not recommended — stick to bottled.
